Carbquik is very much like your standard biscuit mix except it has 90% less carbs. It can be found on Amazon for about $14 for a 3 lb. box and can substitute for wheat flour in many recipes. So what is it?

This creates a product with the taste and properties of wheat flour without the carbs.

This recipe makes about 36 chocolate chip cookies each with only 2 grams of net carbs and is easily hackable with additions like dehydrated cherry or cranberry, chopped dates, nuts, etc.. For this recipe you’ll also need: parchment paper, cookie sheets, wire cooling racks and an oven.

Ingredients


  • 2 1/4 cups Carbquik
  • 1 teaspoon baking soda
  • 2 cups dark chocolate morsels
  • 1 teaspoon salt
  • 1 cup of butter
  • 3/4 cup Swerve
  • 3/4 cup packed brown sugar substitute
  • 1 teaspoon vanilla extract
  • 2 eggs

Steps


  1. Allow butter to reach room temperature
  2. Preheat the oven to 375°F
  3. Mix butter, Swerve, brown sugar substitute, vanilla and eggs.
  4. Add baking soda, salt, and Carbquik.
  5. Stir in chocolate.
  6. Cover baking pans with parchment paper and then drop 2-3 inch portions of cookie dough about 1-2 inches apart on the paper. Raw Cookies
  7. Bake for about 10 to 11 minutes.
  8. When firm enough to move, carefully transfer the paper with the cookies on top to the wire cooling racks.
